Quick Easy Pasta Salad Recipes

Recently I have been trying to eat healthier (... again), but it's been difficult because I work almost every day now and packing lunch at 7am in the morning is not so fun. So now I make 2 different salads every other day at night so I can grab it in the morning! They're really simple so I thought I'd share how to make them.

Chicken Caesar Salad

Ingredients

- 1 Cup Romaine lettuce

- 1 Cup Kale

- 1/4 Cucumber

- Tomato or Cherry Tomato to taste

- 2 Chicken Breast Fillets

- 1/4 Cup Whole Wheat Pasta

- 2 tbsp Caesar Salad Dressing

- Mrs Dash Original Seasoning (Optional)

Instructions

1) Cook pasta to instructions on box, add salt if desired

2) Preheat oven to 250C

3) Sprinkle salt on both sides of chicken breast fillets and Mrs Dash original seasoning on top

4) Cook chicken in oven for 15~20 mins

5) Cut the lettuce, kale, cucumber and tomato

6) Mix lettuce, kale, cucumber, tomato, pasta, chicken breast and 2 tbsp of Caesar salad dressing

7) Put in a mason jar and enjoy or refrigerate!

Zesty Spaghetti Pasta

Ingredients

- 1/2 Cup Sweet Pepper

- 1/2 Cup Carrots

- 1/4 Cucumber

- Tomato or Cherry Tomato to taste

- 1/4 Cup Whole Wheat Spaghetti

- 2 tbsp Zesty Italian Salad Dressing

Instructions

1) Cook spaghetti to instructions on box, add salt if desired

2) Cut the carrots and pepper into thin slices

3) Dice the cucumbers and tomatoes

4) Mix the carrots, pepper, cucumbers, tomatoes, spaghetti, and Italian dressing

5) Put in a mason jar and enjoy or refrigerate!
